Meanings
1. Describes feeling clean, refreshed, and free of dirt or excess.
2. Describes food, drink, or personality as light, refreshing, and not cloying or overbearing.
3. Describes leaving something behind cleanly, without lingering attachment.
4. With a negative expression, means not at all or absolutely not; SAPPA-RI DA can also mean that something is no good at all.

Dogmatic Opinion
Except for sense 4, SAPPA-RI is fundamentally connected with a refreshing feeling.
With food and drink, vinegar, mint, and citrus are typical things that make something feel SAPPA-RI. A sense of freshness is important.
My own theory about sense 4 goes like this: nothing lingers behind → nothing remains → zero → “no idea at all.” Whether or not that is the historical origin, it helps explain how the same sound can evoke both refreshing cleanness and emphatic absence.
That is one of the interesting things about SAPPA-RI: the same word can describe a pleasantly clean state with nothing unpleasant left over, or intensify a negative statement to mean that absolutely nothing is there.

Translation changes dramatically with context. A SAPPA-RI flavor may be light or refreshing; after a shower, “さっぱりした” is “I feel refreshed” or “I feel clean.” “さっぱり分からない” is “I don’t understand it at all.” “景気はさっぱりだ” means business is terrible or things are no good. Learners should not try to force all these uses into one English adjective.
