I do not think NECCHA-RI is a standard dictionary expression.
How exactly is it different from NECCHO-RI? I am not sure. But when I stir natto, I do not find myself thinking, “This is NECCHO-RI.” I am more likely to feel that I am stirring it around NECCHA-RI.
So for me, NECCHA-RI has a particularly active, stringy stickiness—the sort that stretches and clings while something is being mixed.
